In March 2025, while finalizing our family’s coffee export, Fernando Diaz tasted experimental lots from Jesus Galguera’s new fermentation project and selected three standout coffees, including Lot 21 for a typically uncommon process within the Oaxacan state - Natural/Dry process. This coffee was fermented and dried in cherry for 6 days from January 12 to January 18, 2025.
Since December 2023, Jesus has been building a state-of-the-art fermentation facility at his export warehouse in Oaxaca City. Now, in 2025, it’s producing innovative coffees. Traditionally, fermentation happens on farms, but Jesus’ city-based setup allows fresh cherries—brought from the growing regions 6–8 hours away—to be processed in experimental ways, including natural, anaerobic, and washed fermentations using wine and native yeasts.
Our family has worked with Jesus Galguera and his family for over 70 years. Our grandfather knew his father, and our uncles have known Jesus since childhood. The Galgueras have been major Oaxacan coffee exporters for generations, and we collaborate with them every harvest to prepare and ship our family’s coffee directly to Oakland.
