Chiapas is one of Mexico’s oldest cacao producing regions, having consistently grown cacao for millenia. This chocolate was produced and processed by a cooperative group called Granos Selectos de La Montaña, it was established in 2021. Their 12 member coop has transitioned from traditional processing methods of “washing” to fermenting chocolate, producing cacao that’s more suited for bars rather than drinking chocolate. The group is also responsible for the meticulous selection and care of the different varieties of chocolate grown in this region due to its vast genetic diversity.
We’re Curators of Cultura - Inspired by the rich history of cacao in Mexico and the Americas we set out to make a chocolate that celebrates its timeless legacy. We hand-craft each bar, from sourcing to roasting, to bring out the truest flavor of its origin.
